Ingredients

  • 1 pound mild pork sausage
  • 6 eggs
  • 2 - 3 cups milk
  • 1/2 cup flour
  • 2 tablespoons cornstarch
  • 1/2 cup cold water
  • salt and pepper to taste

How To Make sausage & egg gravy over biscuits

  • Step 1
    In a medium pan, crumble up the sausage and add enough water to cover the meat. Bring it to a boil and let the meat cook until done. Drain off the water.
  • Step 2
    Place cooked sausage in a large skillet. Turn the temperature to medium. Let the sausage reheat for a few minutes, then add the eggs. Stir to break the yolks. While eggs are still liquid add the flour and stir into eggs.
  • Step 3
    When the flour is completely incorporated, then pour in the milk. (enough to fill skillet of the 2-3 cups). Stir constantly until the milk is heated through and hot to the touch.
  • Step 4
    In a small bowl, add the cornstarch to the cold water. Stir until the cornstarch is completely dissolved, breaking up any clumps.
  • Step 5
    Pour cornstarch mixture into the skillet. Continue stirring until the milk changes consistency and becomes a gravy. Cook to desired consistency. Stir constantly to prevent scorching. Serve immediately.
