I make these for my grandkids every time they come to "Camp Grandma" for the weekend.

Ingredients

1 pkg
pancake mix
1/2 tsp
cinnamon
1/2 tsp
vanilla
1 jar(s)
rainbow colored sprinkles
1 Tbsp
butter
1 bottle
syrup or jam

How to Make Rainbow Pancakes

Step-by-Step

  • 1Heat griddle or electric skillet to 300 degrees.
    Prepare pancake mix as directed except add 1/2 tsp. vanilla or other food flavoring and 1/2 tsp. cinnamon.
  • 2Using a pastry brush, coat griddle lightly with butter, even if it has a non-stick surface.
    Using a soup ladle, pour pancake mix onto griddle IMMEDIATELY shake rainbow colored sprinkles evenly over poured pancakes.
  • 3When edges are done and pancakes have bubbled in the center, flip.
    Cook until done (about 2-3 more minutes).
    The rainbow sprinkles will melt and color the inside of the pancakes in rainbow glory!
  • 4Serve with your favorite syrup or jam.
