Ingredients
- 6-8 - pieces thick sliced bacon
- 8 inch partially cooked pie shell, placed on butter baking sheet (see notes on cheese)
- 3 large eggs
- 1 1/4-1 1/2 cups heavy cream
- 1/4 teaspoon salt
- pinch nutmeg and pepper
- 1-2 tablespoon butter
How To Make quiche lorraine, ma

Step 1Preheat oven to 375 degrees. Slice bacon in 1/4" pieces and brown lightly. Drain and spread in pie shell. Beat eggs, cream and seasonings. Just before baking, pour mix in shell, filling to within 1/8" of top. Cut butter in bits and put over cream. Bake in upper 1/3 of oven 25-30 min until quiche has puffed and brown and knife comes out clean . Quiche sinks slightly as it cools.

Step 2Notes: you can add 1 c grated swiss cheese, spread 3/4 in bottom of shell. Put rest on top with butter.
