How To Make quiche lorraine, ma

  • Step 1
Preheat oven to 375 degrees. Slice bacon in 1/4" pieces and brown lightly. Drain and spread in pie shell. Beat eggs, cream and seasonings. Just before baking, pour mix in shell, filling to within 1/8" of top. Cut butter in bits and put over cream. Bake in upper 1/3 of oven 25-30 min until quiche has puffed and brown and knife comes out clean . Quiche sinks slightly as it cools.

Notes: you can add 1 c grated swiss cheese, spread 3/4 in bottom of shell. Put rest on top with butter.
