Really YUMMY with "Warm Cider Syrup!"

Ingredients

  • 1 cup sifted flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnimon
  • 1 cup milk
  • 1/2 cup canned pumpkin
  • 2 - slightly beaten egg yokes
  • 2 - stiffly beaten egg whites
  • 2 tablespoons melted butter

How To Make pumpkin puff pancakes

  • Step 1
    (OPT) I also like to add a little ginger or nutmeg to the batter along with about a half cup pecans. Just add according to your liking.
  • Step 2
    Sift together dry ingredients. Combine milk, yokes, pumpkin & butter. Add to dry ingredients, stirring just until flour is moistened. Gently fold in egg whites.
  • Step 3
    Preheat griddle and use 1/3 cup batter per pancake. Cook evenly on both sides. Makes 8 pancakes. Serve with "Warm Cider Syrup" or your favorite maple.
