Ingredients
- 1 cup sifted flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnimon
- 1 cup milk
- 1/2 cup canned pumpkin
- 2 - slightly beaten egg yokes
- 2 - stiffly beaten egg whites
- 2 tablespoons melted butter
How To Make pumpkin puff pancakes

Step 1(OPT) I also like to add a little ginger or nutmeg to the batter along with about a half cup pecans. Just add according to your liking.

Step 2Sift together dry ingredients. Combine milk, yokes, pumpkin & butter. Add to dry ingredients, stirring just until flour is moistened. Gently fold in egg whites.

Step 3Preheat griddle and use 1/3 cup batter per pancake. Cook evenly on both sides. Makes 8 pancakes. Serve with "Warm Cider Syrup" or your favorite maple.
