Really YUMMY with "Warm Cider Syrup!"

Ingredients

  • 1 c
    sifted flour
  • 2 Tbsp
    sugar
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 tsp
    cinnimon
  • 1 c
    milk
  • 1/2 c
    canned pumpkin
  • 2
    slightly beaten egg yokes
  • 2
    stiffly beaten egg whites
  • 2 Tbsp
    melted butter

How to Make Pumpkin Puff Pancakes

Step-by-Step

  1. (OPT) I also like to add a little ginger or nutmeg to the batter along with about a half cup pecans. Just add according to your liking.
  2. Sift together dry ingredients.
    Combine milk, yokes, pumpkin & butter.
    Add to dry ingredients, stirring just until flour is moistened.
    Gently fold in egg whites.
  3. Preheat griddle and use 1/3 cup batter per pancake. Cook evenly on both sides. Makes 8 pancakes.
    Serve with "Warm Cider Syrup" or your favorite maple.
