1 csifted flour
2 tspbaking powder
1/2 ccanned pumpkin
2slightly beaten egg yokes
2stiffly beaten egg whites
2 Tbspmelted butter
How to Make Pumpkin Puff Pancakes
- (OPT) I also like to add a little ginger or nutmeg to the batter along with about a half cup pecans. Just add according to your liking.
- Sift together dry ingredients.
Combine milk, yokes, pumpkin & butter.
Add to dry ingredients, stirring just until flour is moistened.
Gently fold in egg whites.
- Preheat griddle and use 1/3 cup batter per pancake. Cook evenly on both sides. Makes 8 pancakes.
Serve with "Warm Cider Syrup" or your favorite maple.
