pumpkin pie waffles w/warm apple pie topping
Nothing says fall like the aroma of a pumpkin pie or apple pie while it's baking. I combined the two and came up with a wonderful breakfast treat. Hope you enjoy!! Inspired from May Squard blog. I added an apple pie topping to her wonderful pumpkin pie waffles. http://www.maysquared.com/blog/pumpkin-pie-waffles/

How To Make pumpkin pie waffles w/warm apple pie topping
-
Step 1WAFFLE BATTER: Combine flour, baking powder, salt and pumpkin pie spice in a bowl and whisk together to blend.
-
Step 2In a seperate bowl combine buttermilk, pumpkin puree, brown sugar, egg and vegetable oil; mix to combine.
-
Step 3Add wet ingredients to the dry ingredients and stir just until moist.
-
Step 4Spoon onto hot waffle iron and cook 5 to 7 minutes or until steam stops.
-
Step 5APPLE PIE FILLING: Combine all ingredients in a sauce pan and heat over a low/med heat bubbly and the butter has melted.
-
Step 6PUMPKIN PIE SPICE: Combine ingredients, mix well and store in an airtight container. If you have Pumpkin pie spice, you do not need this. I was out of Pumpkin Pie Spice so this was my alternative. Thank goodness for a pantry full of spices!
-
Step 7WHIPPED CREAM TOPPPING: This step is optional and had I not been out of cream I would have added this topping and sprinkled with a little cinnamon. Pour cold whipping cream into a cold bowl. Beat on high speed of hand mixer until it starts to thicken; add sugar; continue beating until it forms a peak. Refrigerate until ready to serve.
-
Step 8Plate your waffle, spoon warm apples on top, add additional butter if desired, add a dollup of whipped cream if desired, dust with cinnamon, sprinke with walnuts, and drizzle with maple syrup. Enjoy!!
