Nothing says fall like the aroma of a pumpkin pie or apple pie while it's baking. I combined the two and came up with a wonderful breakfast treat. Hope you enjoy!! Inspired from May Squard blog. Ingredients

  • WAFFLE BATTER
  • 1 cup all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons pumpkin pie spices (see ingredients below to make you own pumpkin pie spice)
  • 1 cup buttermilk
  • 1/2 cup pumpkin puree (not the pie mix)
  • 1/4 cup brown sugar, firmly packed
  • 1 - egg, lighty beaten
  • 1 tablespoon vegetable oil
  • APPLE PIE TOPPING
  • 1 - 20-oz can apple pie filling
  • - cinnamon to taste
  • - all spice to taste
  • 3 tablespoons brown sugar
  • 1 tablespoon butter
  • - maple syrup to drizzle on top
  • - walnuts, broken coarsely to sprinkle on top
  • PUMPKIN PIE SPICE
  • 4 tablespoons cinnamon, ground
  • 4 teaspoons nutmeg, ground
  • 4 teaspoons ginger powder
  • 3 teaspoons allspice, ground
  • WHIPPED TOPPING
  • 1 cup very cold heavy whipping cream
  • 1/4 cup sugar
  • - cinnamon

How To Make pumpkin pie waffles w/warm apple pie topping

  • Step 1
    WAFFLE BATTER: Combine flour, baking powder, salt and pumpkin pie spice in a bowl and whisk together to blend.
  • Step 2
    In a seperate bowl combine buttermilk, pumpkin puree, brown sugar, egg and vegetable oil; mix to combine.
  • Step 3
    Add wet ingredients to the dry ingredients and stir just until moist.
  • Step 4
    Spoon onto hot waffle iron and cook 5 to 7 minutes or until steam stops.
  • Step 5
    APPLE PIE FILLING: Combine all ingredients in a sauce pan and heat over a low/med heat bubbly and the butter has melted.
  • Step 6
    PUMPKIN PIE SPICE: Combine ingredients, mix well and store in an airtight container. If you have Pumpkin pie spice, you do not need this. I was out of Pumpkin Pie Spice so this was my alternative. Thank goodness for a pantry full of spices!
  • Step 7
    WHIPPED CREAM TOPPPING: This step is optional and had I not been out of cream I would have added this topping and sprinkled with a little cinnamon. Pour cold whipping cream into a cold bowl. Beat on high speed of hand mixer until it starts to thicken; add sugar; continue beating until it forms a peak. Refrigerate until ready to serve.
  • Step 8
    Plate your waffle, spoon warm apples on top, add additional butter if desired, add a dollup of whipped cream if desired, dust with cinnamon, sprinke with walnuts, and drizzle with maple syrup. Enjoy!!
