If you like pumpkin and you like pancakes, these are gonna hit the spot for ya! Some of the things I love about this recipe is that it makes a large batch, leftovers freeze well, and you dont really even have to have syrup with them. They do have to be watched to make sure you dont overcook them. My favorite way to cook them is in an electric waffle maker! It takes all the guess work out of how long to cook them.

Ingredients

  • 2 cups pancake mix
  • 2 tablespoons brown sugar
  • 1 tablespoon cinnamon
  • 1 can evaporated milk (12 oz)
  • 1 cup canned pumpkin (not pumpkin pie mix)
  • 3 tablespoons vegetable oil
  • 2 teaspoons vanilla extract
  • 2 large eggs

How To Make pumpkin pie pancakes

  • Step 1
    Mix first three ingredients in a large bowl.
  • Step 2
    Add the rest of the ingredients and beat with mixer until smooth.
  • Step 3
    Cook on griddle or in skillet on low/medium heat until edges are dry and some bubbles form. Turn and cook until other side is lightly browned. Pancakes are moist, do not overcook.
