These little gems are full of fall flavor and the pecan streusel on top is the perfect touch. They are great for breakfast but also for a snack or even dessert.

all purpose flour
1 tsp
baking powder
1 tsp
baking soda
2 tsp
pumpkin pie spices
1 tsp
nutmeg
1 tsp
cinnamon
1/2 tsp
salt
1 can(s)
pumpkin
1 1/4 c
sugar
1/3 c
oil
2 large
eggs
1 tsp
pure vanilla extract

STREUSEL TOPPING

4 Tbsp
butter room temp
1/2 c
all purpose flour
1/3 c
brown sugar, firmly packed
1 tsp
cinnamon
1/4 c
finely chopped pecans

How to Make Pumpkin Muffins With Streusel

Step-by-Step

  • 1Preheat oven to 350 degrees
  • 2Combine dry ingredients and set aside
  • 3Cream together Pumpkin, eggs, oil,vanilla, sugar. Once blended well add dry ingredients.
  • 4Line cupcake tins and divide batter. I usually fill each one 3/4 of the way full.
  • 5Combine streusel ingredients until crumbly and top each muffin.
  • 6Bake 20-25 minutes
