These little gems are full of fall flavor and the pecan streusel on top is the perfect touch. They are great for breakfast but also for a snack or even dessert.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spices
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 can pumpkin
  • 1 1/4 cups sugar
  • 1/3 cup oil
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • STREUSEL TOPPING
  • 4 tablespoons butter room temp
  • 1/2 cup all purpose flour
  • 1/3 cup brown sugar, firmly packed
  • 1 teaspoon cinnamon
  • 1/4 cup finely chopped pecans

How To Make pumpkin muffins with streusel

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    Combine dry ingredients and set aside
  • Step 3
    Cream together Pumpkin, eggs, oil,vanilla, sugar. Once blended well add dry ingredients.
  • Step 4
    Line cupcake tins and divide batter. I usually fill each one 3/4 of the way full.
  • Step 5
    Combine streusel ingredients until crumbly and top each muffin.
  • Step 6
    Bake 20-25 minutes
