- 1 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons pumpkin pie spices
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 can pumpkin
- 1 1/4 cups sugar
- 1/3 cup oil
- 2 large eggs
- 1 teaspoon pure vanilla extract
- STREUSEL TOPPING
- 4 tablespoons butter room temp
- 1/2 cup all purpose flour
- 1/3 cup brown sugar, firmly packed
- 1 teaspoon cinnamon
- 1/4 cup finely chopped pecans

Step 1Preheat oven to 350 degrees

Step 2Combine dry ingredients and set aside

Step 3Cream together Pumpkin, eggs, oil,vanilla, sugar. Once blended well add dry ingredients.

Step 4Line cupcake tins and divide batter. I usually fill each one 3/4 of the way full.

Step 5Combine streusel ingredients until crumbly and top each muffin.

Step 6Bake 20-25 minutes
