Pumpkin Chocolate Chip Muffins
whole wheat flour
plus 1 teaspoon canola oil
How to Make Pumpkin Chocolate Chip Muffins
2Prepare a 12 cup muffin tin with nonstick spray or liners.
3In a large bowl, combine the flour, baking soda, baking powder, salt, sugar, cinnamon, nutmeg and ginger. Whisk until combined.
4In a separate bowl, mix together egg, pumpkin, apple sauce, oil and vanilla until well combined.
5Combine the wet and dry ingredients and mix until just combined (be careful not to over mix). Fold in chocolate chips.
6Scoop the batter into the prepared muffin tins. Bake for 15-18 minutes.
7If you insert a toothpick it should come out clean. Remove from muffin tin and cool on a wire rack.
