whole wheat flour
1 tsp
baking soda
1 tsp
baking powder
1/2 tsp
2/3 c
1 tsp
1/4 tsp
1/4 tsp
ground ginger
1 c
pumpkin puree
2/3 c
applesauce, unsweetened
1 Tbsp
plus 1 teaspoon canola oil
1 tsp
vanilla extract
2/3 c
chocolate chips

How to Make Pumpkin Chocolate Chip Muffins


  • 1Preheat oven to 350.
  • 2Prepare a 12 cup muffin tin with nonstick spray or liners.
  • 3In a large bowl, combine the flour, baking soda, baking powder, salt, sugar, cinnamon, nutmeg and ginger. Whisk until combined.
  • 4In a separate bowl, mix together egg, pumpkin, apple sauce, oil and vanilla until well combined.
  • 5Combine the wet and dry ingredients and mix until just combined (be careful not to over mix). Fold in chocolate chips.
  • 6Scoop the batter into the prepared muffin tins. Bake for 15-18 minutes.
  • 7If you insert a toothpick it should come out clean. Remove from muffin tin and cool on a wire rack.
