1 1/2 cwhole wheat flour

1 tspbaking soda

2/3 csugar

1 cpumpkin puree

2/3 capplesauce, unsweetened

1 Tbspplus 1 teaspoon canola oil

1 tspvanilla extract

2/3 cchocolate chips
How to Make Pumpkin Chocolate Chip Muffins
- Preheat oven to 350.
- Prepare a 12 cup muffin tin with nonstick spray or liners.
- In a large bowl, combine the flour, baking soda, baking powder, salt, sugar, cinnamon, nutmeg and ginger. Whisk until combined.
- In a separate bowl, mix together egg, pumpkin, apple sauce, oil and vanilla until well combined.
- Combine the wet and dry ingredients and mix until just combined (be careful not to over mix). Fold in chocolate chips.
- Scoop the batter into the prepared muffin tins. Bake for 15-18 minutes.
- If you insert a toothpick it should come out clean. Remove from muffin tin and cool on a wire rack.
