Ingredients

  • 1 large sweet potato
  • 1/4 onion, chopped
  • 1/2 pound maple breakfast sausage
  • 1 teaspoon salt and pepper
  • 2 tablespoons diced pickled jalapenos
  • 3/4 cup shredded cheddar cheese
  • 4 tablespoons butter
  • 4 large eggs

How To Make power protein breakfast

  • Step 1
    Poke holes in a large sweet potato and microwave on high for 6-8 minutes, or until soft. Remove and slice in half lengthwise.
  • Step 2
    In a medium skillet, cook the onion and sausage, breaking up the sausage with a spatula, until cooked through.
  • Step 3
    Place both cooked sweet potato halves on plates and fluff with a fork, adding salt, pepper (I use seasoned pepper) to taste. Place half of the sausage onion mixture on top of each sweet potato half, and top with chopped peppers and then cheese.
  • Step 4
    In a nonstick skillet, cook eggs, 2 at a time in butter, adding salt and pepper (or seasoned pepper) as desired; Place on top of sweet potato sausage on plate.
