Ingredients
- 1 large sweet potato
- 1/4 onion, chopped
- 1/2 pound maple breakfast sausage
- 1 teaspoon salt and pepper
- 2 tablespoons diced pickled jalapenos
- 3/4 cup shredded cheddar cheese
- 4 tablespoons butter
- 4 large eggs
How To Make power protein breakfast

Step 1Poke holes in a large sweet potato and microwave on high for 6-8 minutes, or until soft. Remove and slice in half lengthwise.

Step 2In a medium skillet, cook the onion and sausage, breaking up the sausage with a spatula, until cooked through.

Step 3Place both cooked sweet potato halves on plates and fluff with a fork, adding salt, pepper (I use seasoned pepper) to taste. Place half of the sausage onion mixture on top of each sweet potato half, and top with chopped peppers and then cheese.

Step 4In a nonstick skillet, cook eggs, 2 at a time in butter, adding salt and pepper (or seasoned pepper) as desired; Place on top of sweet potato sausage on plate.
