These were my favorite growing up. My Mom would put them up late Summer/early Fall and we'd have them year round. After my Mom passed away in 2016, I feel close to her when I'm making these and Strawberry Figs. Always use hard preserving pears for this. If you use soft pears, they will just be mushy.

Ingredients

  • 5 gallons pears
  • 5 pounds sugar

How To Make pear preserves

  • Step 1
    Peel and slice pears about 1/4" thick and cut into 2" strips.
  • Step 2
    In a large pot, layer pears & sugar. Let sit overnight.
  • Step 3
    Bring pears to a simmer and cook 2-3 hours, until the pears become transparent. Stir frequently to reduce sticking/scorching.
  • Step 4
    After the pears be come transparent, place a small amount in a bowl and put in the freezer. Check after 5 minutes for thickness. Continue cooking and repeat every 5 minutes until the pears have reached your desired thickness.
  • Step 5
    These can be made shelf stable by following canning and preserving procedures.
