peanut butter banana blender mini muffins

Gluten free muffins that are great fresh, but may also be frozen for a later date. I have made these muffins with peanut butter and also with cashew butter. Both were great. Do not use natural or homemade nut butters, not so great.

Ingredients

  • 1 medium ripe banana
  • 1 - egg
  • 1/2 cup creamy nut butter
  • 3 tablespoons honey
  • 1 tablespoon vanilla
  • 1/4 teaspoon baking soda
  • 1/2 cup raisins or dried cherries

How To Make peanut butter banana blender mini muffins

  • Step 1
    Preheat oven to 400.
  • Step 2
    Spray mini muffin pan with cooking spray.
  • Step 3
    Place all ingredient, except raisins, in food processor. Process until smooth and creamy.
  • Step 4
    Place 1 tablespoon of batter in muffin cup.
  • Step 5
    Top with a few raisins or dried cherries.
  • Step 6
    Bake for 8 -10 minutes, until toothpick inserted in center comes out clean.
  • Step 7
    Allow to cool in pan for 10 minutes.
  • Step 8
    Enjoy!
