peanut butter banana blender mini muffins
Gluten free muffins that are great fresh, but may also be frozen for a later date. I have made these muffins with peanut butter and also with cashew butter. Both were great. Do not use natural or homemade nut butters, not so great.

Ingredients
- 1 medium ripe banana
- 1 - egg
- 1/2 cup creamy nut butter
- 3 tablespoons honey
- 1 tablespoon vanilla
- 1/4 teaspoon baking soda
- 1/2 cup raisins or dried cherries
How To Make peanut butter banana blender mini muffins

Step 1Preheat oven to 400.

Step 2Spray mini muffin pan with cooking spray.

Step 3Place all ingredient, except raisins, in food processor. Process until smooth and creamy.

Step 4Place 1 tablespoon of batter in muffin cup.

Step 5Top with a few raisins or dried cherries.

Step 6Bake for 8 -10 minutes, until toothpick inserted in center comes out clean.

Step 7Allow to cool in pan for 10 minutes.
