Ingredients
- 2 cups water
- 1 cup quinoa
- 1/4 cup apple juice, unsweetened
- 3 tablespoons natural creamy peanut butter
- 1 small banana, chopped
- 2 tablespoons no added sugar raspberry or strawberry jam
- 4 teaspoons chopped, unsalted, blanched hazelnuts or peanuts

Step 1In a medium saucepan combine the water and quinoa. Bring to boiling; reduce heat to medium-low. Cook, covered, for 10 to 15 minutes or until water is absorbed.

Step 2Remove from heat. Add apple juice and peanut butter, stirring until combined. Stir in banana.

Step 3Divide mixture among four bowls. Add a spoonful of of the jam to each serving and top with nuts.
