A diabetic and gluten free breakfast treat. Add a thin apple slice or two on top if inclined

Ingredients

  • 2 cups water
  • 1 cup quinoa
  • 1/4 cup apple juice, unsweetened
  • 3 tablespoons natural creamy peanut butter
  • 1 small banana, chopped
  • 2 tablespoons no added sugar raspberry or strawberry jam
  • 4 teaspoons chopped, unsalted, blanched hazelnuts or peanuts

How To Make peanut butter and fruit quinoa, diabetic

  • Step 1
    In a medium saucepan combine the water and quinoa. Bring to boiling; reduce heat to medium-low. Cook, covered, for 10 to 15 minutes or until water is absorbed.
  • Step 2
    Remove from heat. Add apple juice and peanut butter, stirring until combined. Stir in banana.
  • Step 3
    Divide mixture among four bowls. Add a spoonful of of the jam to each serving and top with nuts.
