Ingredients
- PARMESAN BUTTER
- 3 tablespoons soft butter
- 1/4 cup finely grated Parmigiano-Reggiano
- salt
- TOAST
- - baguette cut into equal portions.
- 12 stalks asparagus, cut into baguette size pieces
- salt & olive oil
- 1 tablespoon butter
- 4 large eggs
- red pepper flakes
How To Make parmesan butter with asparagus and egg toast

Step 1To make the Parmesan butter, mix the soft butter with the Parmigiano cheese and salt. Set aside.

Step 2Preheat the broiler to high. Position the rack on the top third of the oven. Line a baking sheet with foil and add the asparagus in a single layer and drizzle olive oil over top, and sprinkle with salt. Place under the broiler for about 5 minutes, shaking the pan. Remove from the oven.

Step 3Spread the Parm butter on each baguette. Place under the broiler until the cheese has melted. Remove from oven. Top the baguettes with the asparagus.

Step 4Fry the eggs in the butter until the whites are cooked. Place the egg on top the asparagus then sprinkle the red pepper flakes on top.
