I originally found this recipe in the Woman's Day Encyclopedia of Cookery my Mamma collected when I was small. I made a few adjustments to suit my family's taste. Hope yours like it too!

Ingredients
- 1 1/2 cups all purpose flour
- 1/2 cup white cornmeal
- 4 teaspoons baking powder
- 3 tablespoons granulated sugar
- 1 teaspoon salt
- 1 1/4 cups milk
- 1/4 cup butter flavored crisco, melted
- 2 - eggs, beaten
How To Make pancakes

Step 1Mix wet ingredients in medium bowl.

Step 2Mix dry ingredients in large bowl.

Step 3Add wet ingredients to dry ingredients, mixing until just combined.

Step 4Let sit 5-10 minutes.

Step 5For thicker pancakes, use less milk. For thinner pancakes, use more milk.

Step 6Pour 1/4 cup batter onto hot griddle. When edges are dry and the middle has bubbles, turn them over. When both sides are browned, move to a warm plate until all are done.

Step 7Serve with your choice of butter, jam, syrup, or fruit.
