I originally found this recipe in the Woman's Day Encyclopedia of Cookery my Mamma collected when I was small. I made a few adjustments to suit my family's taste. Hope yours like it too!

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup white cornmeal
  • 4 teaspoons baking powder
  • 3 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 1/4 cups milk
  • 1/4 cup butter flavored crisco, melted
  • 2 - eggs, beaten

How To Make pancakes

  • Step 1
    Mix wet ingredients in medium bowl.
  • Step 2
    Mix dry ingredients in large bowl.
  • Step 3
    Add wet ingredients to dry ingredients, mixing until just combined.
  • Step 4
    Let sit 5-10 minutes.
  • Step 5
    For thicker pancakes, use less milk. For thinner pancakes, use more milk.
  • Step 6
    Pour 1/4 cup batter onto hot griddle. When edges are dry and the middle has bubbles, turn them over. When both sides are browned, move to a warm plate until all are done.
  • Step 7
    Serve with your choice of butter, jam, syrup, or fruit.
