I originally found this recipe in the Woman's Day Encyclopedia of Cookery my Mamma collected when I was small. I made a few adjustments to suit my family's taste. Hope yours like it too!

Ingredients

  • 1 1/2 c
    all purpose flour
  • 1/2 c
    white cornmeal
  • 4 tsp
    baking powder
  • 3 Tbsp
    granulated sugar
  • 1 tsp
    salt
  • 1 1/4 c
    milk
  • 1/4 c
    butter flavored crisco, melted
  • 2
    eggs, beaten

How to Make Pancakes

Step-by-Step

  1. Mix wet ingredients in medium bowl.
  2. Mix dry ingredients in large bowl.
  3. Add wet ingredients to dry ingredients, mixing until just combined.
  4. Let sit 5-10 minutes.
  5. For thicker pancakes, use less milk. For thinner pancakes, use more milk.
  6. Pour 1/4 cup batter onto hot griddle. When edges are dry and the middle has bubbles, turn them over. When both sides are browned, move to a warm plate until all are done.
  7. Serve with your choice of butter, jam, syrup, or fruit.
