Ingredients
- 2 - large eggs
- 2 cups buttermilk
- 1/4 cup vegetable oil
- 1/4 teaspoon vanilla
- 2 1/2 cups self rising flour
- 2 tablespoons white sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
How To Make pancakes

Step 1Put 1/4 - 1/2 tsp vegetable oil on a cast iron griddle and heat on medium. (electric= #3, gas= the flame should barely have yellow on the flame)In a medium size bowl with a wire whisk, beat eggs until fully blended. Add next 3 ingredients, beat well.

Step 2Add flour, sugar, baking soda and salt. Mix just until large lumps are gone.

Step 3Pour 1/4 cup batter for each pancake onto griddle. When the bubbles begin to break, flip. Cook until lightly brown, keep an eye on them it won't take as long as the first side. (if you cook them too fast, the middle won't get done.) Any leftovers can be reheated the next day in the microwave or frozen for later use. Enjoy. :)
