Ingredients For one-pan summer eggs

  • 1 Tbsp
    olive oil
  • 2 lg
    zucchini (chopped)
  • 1
    small onion
  • 7 oz
    cherry tomatoes
  • 1
    clove garlic (crushed)
  • 2
    eggs
  • 1 tsp
    basil or other seasoning to taste
  • 2
    yellow squash (chopped)

How To Make one-pan summer eggs

    Heat oil in a non-stich frying pan, then add the zucchini. Fry for 5 mins, stirring every so often until they start to soften. Add the tomatoes and garlic, then cook for a few mins more.

    Stir in a little seasoning, then make two gaps in the mix and crack in the eggs. Cover the pan with a lid or a sheet of foil, then cook for 2-3 mins until the eggs are done to your liking. Scatter over a few basil leaves and serve wih crusty bread

    Make it for Brunch: Fry some turkey bacon and add a few country-fried potatoes with it ... Yum !
