Ingredients
- 1 tablespoon olive oil
- 2 large zucchini (chopped)
- 1 - small onion
- 7 ounces cherry tomatoes
- 1 - clove garlic (crushed)
- 2 - eggs
- 1 teaspoon basil or other seasoning to taste
- 2 - yellow squash (chopped)
How To Make one-pan summer eggs

Step 1Heat oil in a non-stich frying pan, then add the zucchini. Fry for 5 mins, stirring every so often until they start to soften. Add the tomatoes and garlic, then cook for a few mins more.

Step 2Stir in a little seasoning, then make two gaps in the mix and crack in the eggs. Cover the pan with a lid or a sheet of foil, then cook for 2-3 mins until the eggs are done to your liking. Scatter over a few basil leaves and serve wih crusty bread

Step 3Make it for Brunch: Fry some turkey bacon and add a few country-fried potatoes with it ... Yum !
