These are soooo good! They don't even need syrup! **Note** If the pancakes are too hard to flip, add a little more flour to make them firmer.

Ingredients

  • 1 cup old fashioned oats
  • 1 1/4 cups flour
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • dash nutmeg
  • 1/4 cup walnuts, chopped
  • 3/4 cup plain greek yogurt
  • 3/4 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 - really ripe bananas, mashed up
  • 3/4 cup raisins
  • 1/4 cup butter, melted

How To Make oatmeal cookie pancakes

  • Step 1
    In a large bowl mix first 8 ingredients.
  • Step 2
    In another bowl mix next 4 ingredients.
  • Step 3
    Whisk the wet ingredients into the dry ingredients until well combined.
  • Step 4
    Fold in mashed bananas and raisins. Stir in melted butter.
  • Step 5
    Heat a non stick pan over med-low heat. Spray with cooking spray or melt additional butter.
  • Step 6
    Cook pancakes, about a 1/3 c. at a time, until bubbles form on top, then turn. Cook about 2 min. on each side.
  • Step 7
    Serve drizzled with maple syrup or honey!
