These are soooo good! They don't even need syrup!

**Note** If the pancakes are too hard to flip, add a little more flour to make them firmer.

Ingredients

old fashioned oats
1 1/4 c
flour
1/2 c
brown sugar
2 tsp
baking powder
1/2 tsp
baking soda
1 tsp
ground cinnamon
dash(es)
nutmeg
1/4 c
walnuts, chopped
3/4 c
plain greek yogurt
3/4 c
milk
2 large
eggs
1 tsp
vanilla
2
really ripe bananas, mashed up
3/4 c
raisins
1/4 c
butter, melted

How to Make Oatmeal Cookie Pancakes

Step-by-Step

  • 1In a large bowl mix first 8 ingredients.
  • 2In another bowl mix next 4 ingredients.
  • 3Whisk the wet ingredients into the dry ingredients until well combined.
  • 4Fold in mashed bananas and raisins. Stir in melted butter.
  • 5Heat a non stick pan over med-low heat. Spray with cooking spray or melt additional butter.
  • 6Cook pancakes, about a 1/3 c. at a time, until bubbles form on top, then turn. Cook about 2 min. on each side.
  • 7Serve drizzled with maple syrup or honey!
