nutella granola bars

My youngest is allergic to peanuts so I created chewy granola bars that my whole family could enjoy. I hope you like it!

Ingredients

  • 5 cups quick cooking oats
  • 4 1/2 cups rice krispies/crisped rice cereal
  • 2 cups semi-sweet chocolate chips
  • 8-10 - graham crackers, crushed
  • 12 tablespoons butter, unsalted
  • 1/4 cup nutella hazlenut spread
  • 1/4 cup vegetable oil
  • 1/4 cup honey
  • (2)-10 ounce bags of mini marshmallows

How To Make nutella granola bars

  • Step 1
    Lightly grease a 10 by 15 inch pan and set aside. ( you can also use a large baking sheet, depending on how thick you want your bars).
  • Step 2
    Combine the oats, rice cereal, chocolate chips, and graham cracker crumbs in a large bowl until well blended. Set aside.
  • Step 3
    Melt the butter, Nutella, oil, honey, and marshmallows in a large saucepan. Stir well until the mixture is evenly melted and smooth. Add to the dry ingredients and mix until thoroughly combined. ( It can get a little sticky.. I rubbed oil on my hands and mixed it together).
  • Step 4
    Spread the mixture into the prepared pan, let cool, then cut into bars.
  • Step 5
    Hint: using a rolling pin will ensure even distribution in the pan. I also used a pizza cutter to cut it into squares :-)
