No Bake Granola Bars

These super simple no bake granola bars are a staple in our house. Change them up with nuts, dried fruit, or different types of chocolate chips. They are just right for a quick snack, and hit the spot to tame the sweet tooth, too!

Ingredients

  • 4 Tbsp
    unsalted butter
  • 1/4 c
    honey
  • 1/3 c
    brown sugar, packed
  • 2 c
    quick cooking oats
  • 1 c
    puffed rice cereal (like rice crispies)
  • 2 Tbsp
    toasted wheat germ
  • 1/2 tsp
    vanilla
  • 3-4 Tbsp
    mini chocolate chips

How to Make No Bake Granola Bars

Step-by-Step

  1. Melt the butter, honey and brown sugar in a small pot over medium. When it starts to bubble, turn the heat to low and let cook for 2 minutes to dissolve the sugar completely. Remove from heat, and add the vanilla.
  2. Combine the rice cereal, oats and wheat germ in a bowl. Pour the butter/sugar mixture over the cereal/oat mixture. Stir to combine. Add in 2-3 Tbsp of the chocolate chips.
  3. Pour the mixture into a lightly greased pan and press firmly. I like mine thick, so I use a jelly roll pan and pack the mixture up to the rim. Sprinkle the remaining chocolate chips on the top and press slightly into the bars.
  4. Let cool, and cut into bars. Store in an airtight container or wrap individual bars. Enjoy!
