my favorite pancakes

A lot of times it was just easier and cheaper to make the pancakes myself. This one is another, old, old favorite.

Ingredients

  • 1 1/4 cups sifted all-purpose flour
  • 3 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 - beaten egg
  • 1 cup milk
  • 2 tablespoons salad oil

How To Make my favorite pancakes

  • Step 1
    Sift together dry ingredients.
  • Step 2
    Combine egg,milk and salad oil, add to dry ingredients, stirring just till moistened.
  • Step 3
    Bake on hot griddle. Makes about 12 dollar-size, or eight 4-inch pancakes. *Note for thinner pancakes, add 2 tablespoons milk to batter*
  • When adding fruit such as blueberries, when it gets brown on the bottom add some berries (as seen in the photo), and then flip and finish making your pancakes. The blueberries will get cooked in the batter, and not separate.
    Step 4
    For blueberry pancakes: when undersides of pancakes are nicely browned, sprinkle about 2 tablespoons drained blueberries on each cake. Turn, brown other side.
  • Step 5
    For buttermilk pancakes: Substitute buttermilk or sour milk for sweet milk, add 1/2 teaspoon soda and reduce baking powder to 2 teaspoons. Bake on hot griddle.
