my favorite pancakes
A lot of times it was just easier and cheaper to make the pancakes myself. This one is another, old, old favorite.

Makes about 12 dollar-size or 8 4-inch pancakes
Ingredients
- 1 1/4 cups sifted all-purpose flour
- 3 teaspoons baking powder
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 - beaten egg
- 1 cup milk
- 2 tablespoons salad oil
How To Make my favorite pancakes

Step 1Sift together dry ingredients.

Step 2Combine egg,milk and salad oil, add to dry ingredients, stirring just till moistened.

Step 3Bake on hot griddle. Makes about 12 dollar-size, or eight 4-inch pancakes. *Note for thinner pancakes, add 2 tablespoons milk to batter*

Step 4For blueberry pancakes: when undersides of pancakes are nicely browned, sprinkle about 2 tablespoons drained blueberries on each cake. Turn, brown other side.

Step 5For buttermilk pancakes: Substitute buttermilk or sour milk for sweet milk, add 1/2 teaspoon soda and reduce baking powder to 2 teaspoons. Bake on hot griddle.
