A lot of times it was just easier and cheaper to make the pancakes myself. This one is another, old, old favorite.

Makes about 12 dollar-size or 8 4-inch pancakes

1 1/4 c
sifted all-purpose flour
3 tsp
baking powder
1 Tbsp
1/2 tsp
beaten egg
1 c
2 Tbsp
salad oil

How to Make My Favorite Pancakes


  • 1Sift together dry ingredients.
  • 2Combine egg,milk and salad oil, add to dry ingredients, stirring just till moistened.
  • 3Bake on hot griddle. Makes about 12 dollar-size, or eight 4-inch pancakes.

    *Note for thinner pancakes, add 2 tablespoons milk to batter*
  • 4For blueberry pancakes: when undersides of pancakes are nicely browned, sprinkle about 2 tablespoons drained blueberries on each cake. Turn, brown other side.
  • 5For buttermilk pancakes: Substitute buttermilk or sour milk for sweet milk, add 1/2 teaspoon soda and reduce baking powder to 2 teaspoons. Bake on hot griddle.
