The Maryland Breakfast
(say it like Elmer Fudd) it's infamous
I love ketchup with mine.... a little toasted Challah Bread makes it good really too, friends and family love it.

1/4 mediumthinly sliced onion
1/4 mediumthinly sliced green pepper
1/4 largethinly sliced red pepper
1/4 coilive oil
1/2 cdesired cheese/ american,sharp,feta,etc...
How to Make Maryland Breakfast
- Cook beacon as normal after beacon has cooled crumple an place to the side,Scramble eggs place to the side, prep peppers and onions place to the slide.
- Peel and slice potatoes (chip style) only a little thicker add olive oil to a non stick frying pan, strategically place potatoes in pan to allow small spaces between the potatoes. Begin frying potatoes cover with a medium flame when potato edges have browned flip potatoes be sure to leave small spaces between the potatoes after you have flipped them. Cover the pan for about 2 minutes then add water cover for 5 minutes add onions and peppers then cover the pan.
Pour scrambled eggs over the ingredients cover for 5 minutes
(eggs holds everything together) salt and pepper to taste, sprinkle cheese then cover pan for 5 minutes.
