The story to this recipe is cute, one night my friends and I took spur of the moment road trip to visit my favorite cousin in Maryland. We woke up hungry, the only things in the frig were the ingredients for this recipe. No one wanted to go to the store, so we made due. The Maryland Breakfast (say it like Elmer Fudd) it's infamous I love ketchup with mine.... a little toasted Challah Bread makes it good really too, friends and family love it. Hope you enjoy it too!

Ingredients
- 1/2 pound beacon
- 2 large potatos
- 1/4 medium thinly sliced onion
- 1/4 medium thinly sliced green pepper
- 1/4 large thinly sliced red pepper
- 5 large eggs
- 1/4 cup oilive oil
- 1/4 cup water
- 1/2 cup desired cheese/ american,sharp,feta,etc...
How To Make maryland breakfast

Step 1Cook beacon as normal after beacon has cooled crumple an place to the side,Scramble eggs place to the side, prep peppers and onions place to the slide.

Step 2Peel and slice potatoes (chip style) only a little thicker add olive oil to a non stick frying pan, strategically place potatoes in pan to allow small spaces between the potatoes. Begin frying potatoes cover with a medium flame when potato edges have browned flip potatoes be sure to leave small spaces between the potatoes after you have flipped them. Cover the pan for about 2 minutes then add water cover for 5 minutes add onions and peppers then cover the pan. Pour scrambled eggs over the ingredients cover for 5 minutes (eggs holds everything together) salt and pepper to taste, sprinkle cheese then cover pan for 5 minutes. All done!
