These are the best pancakes I have ever tried! Easy to whip up as long as you have the buttermilk on hand. You can add sliced bananas, blueberries, whatever... I add the fruit after I've dropped the pancake batter in the pan so fruit is evenly distributed throughout each pancake.

- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tablespoons sugar
- 2 large eggs
- 3 cups buttermilk
- 4 tablespoons melted butter, plus more for pan

Step 1Whisk together flour, baking powder, baking soda, salt, and sugar in a medium bowl.

Step 2Add eggs, buttermilk, and 4 tablespoons butter; whisk to combine. Batter should have small to medium lumps.

Step 3I drop mine in a 12" skillet pan using a 1/3 cup measuring cup. That fits 3 pancakes at once. It makes about 20 pancakes this size.

Step 4If using fruit, I drop the 3 pancakes and then spread the fruit out on each. Turn when the top is covered with bubbles and is browning nicely.
