Lemon Pancakes with Lemon Syrup
I did cheat with the baking mix but sometimes I make my own.
We have these on Mothers Day and Sundays when I am feeling extra generous.
How to Make Lemon Pancakes with Lemon Syrup
- Beat together the baking mix, milk, egg, and the juice and grated rinds of the 2 lemons. Spoon by small amounts into a buttered skillet. (It is preferable to have the pancakes thin and small-silver dollar size.) The pancakes are ready to turn when the batter becomes bubbly and browns around the edges.
- Lemon Syrup
- Make lemon syrup in a saucepan by combining the water, sugar, the one cup of lemon juice, and grated rind of 1 lemon. Simmer for 5 to 10 minutes.
