latka's a la king

My father, Roy, came up with this one. I'm not sure if he found it somewhere or if it's his own recipe but they are great! Another name is Roy's Stupendous Latkas (he's a character) :) Hope you enjoy and please comment!

Ingredients
- 20 ounces instant mashed potatoes
- 1/2 - bag frozen hashbrowns
- 1 teaspoon coarsely ground black pepper (pepper mill coarse)
- 2 teaspoons salt (or to taste)
- 3 tablespoons self-rising flour
- 1/2 teaspoon dried thyme
- 1 medium onion - small diced
- 5 tablespoons canola oil (or light olive oil)
- 4 - eggs (or 1 carton egg substitute)
- - applesauce (garnish)
- - sour cream (garnish)
How To Make latka's a la king

Step 1Mix all dry ingredients first in a large mixing bowl.

Step 2Add onion and eggs.

Step 3Drop oil onto hot pancake-type griddle and drop mixture by tablespoon-fulls onto griddle.

Step 4Fry until golden on each side. Remove from griddle to paper towel.

Step 5Serve hot and with warm applesauce (I like a touch of cinnamon and butter in mine) OR sour cream (room-temperature)
