My father, Roy, came up with this one. I'm not sure if he found it somewhere or if it's his own recipe but they are great! Another name is Roy's Stupendous Latkas (he's a character) :) Hope you enjoy and please comment!

Ingredients For latka's a la king

  • 20 oz
    instant mashed potatoes
  • 1/2
    bag frozen hashbrowns
  • 1 tsp
    coarsely ground black pepper (pepper mill coarse)
  • 2 tsp
    salt (or to taste)
  • 3 Tbsp
    self-rising flour
  • 1/2 tsp
    dried thyme
  • 1 md
    onion - small diced
  • 5 Tbsp
    canola oil (or light olive oil)
  • 4
    eggs (or 1 carton egg substitute)
  • applesauce (garnish)
  • sour cream (garnish)

How To Make latka's a la king

  • 1
    Mix all dry ingredients first in a large mixing bowl.

    Add onion and eggs.
  • 3
    Drop oil onto hot pancake-type griddle and drop mixture by tablespoon-fulls onto griddle.

    Fry until golden on each side. Remove from griddle to paper towel.
  • 5
    Serve hot and with warm applesauce (I like a touch of cinnamon and butter in mine) OR sour cream (room-temperature)
