john friendly amidon's pancakes
My dad made these pancakes when I was growing up. My husband took over when we were married. He substituted buttermilk for regular milk. All the children (adults too) love to have Dick make these pancakes for breakfast.

Ingredients
- 2 cups all purpose flour
- 1 tablespoon double acting baking powder
- 1/2 teaspoon kosher salt
- 2 tablespoons sugar
- 4 - eggs, separated
- 1 tablespoon canola oil
- 2 cups buttermilk

Step 1Mix together the dry ingredients and set aside.

Step 2Beat egg whites until stiff.

Step 3Add oil, egg yolks and buttermilk to dry ingredients, stirring just until moistened. There should be some small lumps.

Step 4Gently fold in egg whites, do not over mix.

Step 5Bake on a hot griddle until bubbles burst then flip until golden brown.
