My dad made these pancakes when I was growing up. My husband took over when we were married. He substituted buttermilk for regular milk. All the children (adults too) love to have Dick make these pancakes for breakfast.

  • 2 c
    all purpose flour
  • 1 Tbsp
    double acting baking powder
  • 1/2 tsp
    kosher salt
  • 2 Tbsp
    sugar
  • 4
    eggs, separated
  • 1 Tbsp
    canola oil
  • 2 c
    buttermilk

How To Make john friendly amidon's pancakes

    Mix together the dry ingredients and set aside.

    Beat egg whites until stiff.

    Add oil, egg yolks and buttermilk to dry ingredients, stirring just until moistened. There should be some small lumps.

    Gently fold in egg whites, do not over mix.

    Bake on a hot griddle until bubbles burst then flip until golden brown.
