Ingredients
- 1 cup sweet sushi rice
- 8 cups water
- 3 tablespoons japanese soy sauce
- 2 tablespoons mirin
- 1/2 pound wild mushrooms, i used shiitaki, oyster and maiitaki mushroom sliced
- 1 cup scallions chopped
- 2 large eggs beaten
How To Make japanese congee with wild mushrooms

Step 1Put the rice in a colander and rinse under cold water using your fingers as a rake to remove some of the talc. Add the drained rice to a large pot.

Step 2Add the water and heat to boiling. reduce heat to simmer and partially cover with a lid and simmer for 1 hour stirring ocassionally.

Step 3Add the soy sauce, mirin, mushrooms, scallions and cook for 5 minutes. Stir in the beaten eggs and cook 2 more minutes. Serve
