honey glistened banana bread muffins
I had some extra bananas to use and wanted to create a new recipe for Mother's Day Brunch that was a step above than the usual breakfast muffin. I combined the best elements of our favorite Banana Bread and sweet bread recipes, and I came up with a great muffin recipe that'll be perfect for Mother's Day brunch. The banana liqueur adds a little extra touch for mom! These will be perfect, all stacked so nicely in our bread basket with Grandma's handmade basket liner, and taking a prominent place in the center of the buffet table. Ingredients
- 3/4 cup - granulated sugar (white sugar)
- 1/2 cup - applesauce
- 2 tablespoons unsalted butter, very soft
- 2 large eggs
- 3 medium bananas, ripe and soft but still yellow - mashed (i left some small chunks, but you can mash as fine as you prefer)
- 1/2 cup - chopped macadamia nuts (or chopped walnuts)
- 2 cups - all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 cup - honey
- 2 tablespoons banana liqueur
How To Make honey glistened banana bread muffins

Step 1Preheat oven to 350°F (175 °C). Place 12 paper liners in a regular-size muffin tin, or generously butter sides and bottoms of 12 muffin cups of a muffin tin.

Step 2In a large bowl, use electric mixer to beat together the sugar, applesauce, softened butter, and egg for about 1 minute or until creamy and light yellow. Beat in bananas and nuts. Add flour, baking soda, salt, vanilla and cinnamon, and beat until smooth, about 2 to 3 minutes.

Step 3Spoon the batter into the paper liners to just before batter reaches tops of the paper liners (for tall, lofty mounded muffins). Slide the back of a large spoon over the batter to form a smooth surface.

Step 4In a small bowl, stir together the honey and banana liqueur until well blended. Drizzle about a teaspoon of the spiked honey in a thin line (in a random pattern) across the surface of the batter.

Step 5Bake for 20 to 30 minutes, or until a toothpick inserted in the center of a muffin comes out clean. While muffins are still piping hot from the oven, brush some of the remaining spiked honey on top (optional). Set muffins aside to cool completely and to allow brushed-on honey glaze to "set" a bit.
