Ingredients For honey butter sweet potato hash

  • 8 slice
    bacon, cooked
  • 1
    sweet potato, peeled, shredded
  • 3 Tbsp
    ghee, melted, divided
  • 2 Tbsp
  • 8
    eggs, whisked
  • salt and pepper

How To Make honey butter sweet potato hash

    Preheat oven 350.
  • 2
    Place sweet potatoes in a large bowl.

    In a small bowl whisk together ghee and honey. Pour over sweet potatoes; toss to coat. Spread out on a cookie sheet; bake 10-15 minutes. Make sure not to burn.

    Heat remaining ghee in skillet over med-hi heat. Add eggs, season with salt and pepper and scramble. Stir and cook 5 minutes, or until cooked through. Serve with hash and bacon.
