I saw something like this on a commercial for Taco Bell and thought the idea was great, so I decided to make my own. A handheld breakfast sandwich with a crispy outside. I know the corn sounds weird, but the sweetness goes very well with the savoriness of the bacon and egg mixture. It may seem like a lot of steps, but you can do a lot of these things at the same time, so it really is quick to make. I hope you try it!

These homemade breakfast crunchwraps are a delicious and different approach to a breakfast sandwich. So good, they'd be delicious for dinner too. Savory eggs are a nice contrast to the sweet corn and smoky bacon. Onion and bell peppers add a lot of flavor. The tortillas crisp up and hold in the gooey cheese and other sandwich ingredients. Great if you're serving a crowd or need an easy grab-and-go breakfast.

Ingredients

  • 6 - extra large eggs
  • 2 tablespoons water
  • 2 tablespoons butter
  • 1 cup frozen corn
  • 1/2 medium onion, diced
  • 1/2 medium green bell pepper, diced
  • 4 slices bacon, cooked and crumbled
  • 6 large flour tortillas
  • 6 slices Velveeta singles

How To Make homemade breakfast crunchwraps

  • Whisk eggs and water.
    Step 1
    Mix eggs with 2 tablespoons of water. Set aside.
  • Saute butter, corn, onions, and pepper.
    Step 2
    Saute butter, corn, onions, and peppers in a large skillet over medium-high heat for 2-3 minutes.
  • Add egg mixture and bacon.
    Step 3
    Add egg mixture and bacon. Lower heat to medium.
  • Fold veggies into the eggs.
    Step 4
    Slowly fold the veggies into eggs while they cook. When they look almost done, pull them off the heat and cover.
  • Place cheese in the center of a heated tortilla and top with egg mixture.
    Step 5
    Spray another large skillet with cooking spray and heat to medium. Heat tortillas in the microwave for 15 seconds, for easier folding. Place a slice of cheese in the center of the tortilla. Add a large spoonful of egg mixture on top of the cheese. Add more cheese, if desired.
  • Fold the tortilla.
    Step 6
    Fold tortilla in over mixture 5 times. It will look like a pentagram.
  • Place in the skillet seam side down.
    Step 7
    Put into the hot skillet folded side down. Cook until nicely browned, crispy, and sealed; about 3-5 minutes.
  • Flip and brown the other side.
    Step 8
    Flip and brown the other side.
  • Serve with your favorite condiments.
    Step 9
    Serve with your choice of salsa, other condiments, or just plain.
