hearty pancake mix in a jar

One of the gifts I give to my kids, and friend for Christmas is a Breakfast in a Jar, or basket. My newlywed son, and my Daughters, both with children love these, since they are all ready for them to make a quick and good breakfast for the busy Christmas mornings, so they can have the time to enjoy the whole day.

Ingredients

  • 1 cup old fashioned oats
  • 2 cups all purpose flour
  • 1 1/2 cups whole wheat flour
  • 1 cup dry buttermilk powder
  • 1/3 cup sugar
  • 3 tablespoons baking powder
  • 1 tablespoon baking soda
  • 1 teaspoon dried orange peel
  • 1 cup raisins
  • 1 cup sliced almonds, toasted

How To Make hearty pancake mix in a jar

  • Step 1
    Process oats in a food processor util coarsely ground. Add flours, buttermilk powder, sugar, baking powder, a baking soda, and orange peel: process util blended. Transfer dry ingredients to a large bowl. Stir in raisins and almonds. Divide into 2 resealable plastic bags, or pint size canning jars. Give with serving instructions. Yields about 6 1/4 cups of pancake mix.
  • Step 2
    To Serve: Grease and preheat griddle. Combine 1 bag or jar of pancake mix, 1 2/3 cups water, 1 egg, and 3 tablespoons vegetable oil in a medium bowl. Stir just until moistened. For each pancake, pour about 1/4 cup batter onto griddle. Cook until toop of pancake has a few bubbles and bottom is golden brown. Turn with a spatula and cook until remaining side is golden brown. serve warm pancakes with syrup of choice. I like to give a bowl, dish towel, hot pad, and wooden spoon and spatula with the gift.
