This is an interesting combination of French toast and bacon. I love making this dish when I have a house full of people. It is easy to make and always gets a lot of compliments.

Ingredients

  • 1/2 pound sliced canadian bacon
  • 1/2 cup orange marmalade
  • 1/4 cup prepared yellow mustard
  • 4 slices pumpernickel bread
  • 2 tablespoons butter, room temperature
  • 1/2 pound gouda cheese, cut into 8 slices

How To Make hearty eye-opener sandwiches

  • Step 1
    Preheat broiler
  • Step 2
    Cook Canadian bacon in large frying pan over medium-low heat for 3 minutes on each side until hot. Leave in pan.
  • Step 3
    Combine marmalade and mustard and pour over bacon in pan. Simmer 10 minutes, turning bacon often to coat in sauce.
  • Step 4
    Place bread slices on ungreased baking sheet. Spread 1/2 tablespoon butter on top of each slice. Top with bacon slices. Spoon 1 teaspoon sauce over each slice of bacon, then top each with 2 slices of cheese.
  • Step 5
    Broil sandwiches 3 inches from heat for 3 minutes, or until cheese melts.
