ham leftovers make brunch biscuits
We love our large family gatherings and always have lots of food. The challenge after the holidays is how to re-purpose the food like ham and turkey and not make it seem like "leftovers".

Ingredients
- 1 can refeigerated flaky biscuits (8/can)
- 1 cup chopped ham (bite size pieces)
- 1/2 cup cheddar cheese, shredded
- 4 - eggs
How To Make ham leftovers make brunch biscuits

Step 1Line 8 sections of large cupcake tin with one of biscuit dough rounds. Press against sides of tin to resemble nest.

Step 2Add ham chopped to bite size pieces into dough nest.

Step 3Top with about 1 Tablespoon of shredded cheddar cheese.

Step 4Top with raw egg. (I only cover 4 of the biscuits with an egg and leave 4 plain)

Step 5Bake in preheated 350 degree oven for 15 minutes. Allow to cool a bit before removing biscuits from tin.

Step 6Serve with fruit and juice for a nice "brunch" food item. Note: if you choose to omit the egg in step 4 above, you can always add a poached egg and hollandaise sauce to the plain biscuits to serve later.
