I have an old recipe for griddle cakes which are moist and fluffy. These are great for any meal along with warm home-made maple syrup, over-easy eggs and bacon, but I also throw them into baggies and take them hiking.

Ingredients
- 2 cups rolled oats
- 1 1/2 cups all purpose flour
- 1 teaspoon sea slat
- 1 teaspoon baking soda
- 2 tablespoons hot water
- 1 teaspoon baking powder
- 2 1/2 cups almond milk
- 2 tablespoons heavy whipping cream
- 2 - eggs, beaten
- 2 - bananas
- 2 teaspoons honey
How To Make griddle cakes

Step 1Combine oats and flour in a large bowl; add almond milk, stir and refrigerate overnight.

Step 2In the morning, mash the bananas and dissolve the baking soda in the hot water.

Step 3Add salt, baking soda mixture, baking powder, bananas and honey to the flour mixture and stir in.

Step 4On a medium high oiled skillet, drop griddle cake mixture by spoonfuls onto griddle. Cook until edges look dry and flip.

Step 5Serve with warm maple syrup
