I have an old recipe for griddle cakes which are moist and fluffy. These are great for any meal along with warm home-made maple syrup, over-easy eggs and bacon, but I also throw them into baggies and take them hiking.

Ingredients

  • 2 cups rolled oats
  • 1 1/2 cups all purpose flour
  • 1 teaspoon sea slat
  • 1 teaspoon baking soda
  • 2 tablespoons hot water
  • 1 teaspoon baking powder
  • 2 1/2 cups almond milk
  • 2 tablespoons heavy whipping cream
  • 2 - eggs, beaten
  • 2 - bananas
  • 2 teaspoons honey

How To Make griddle cakes

  • Step 1
    Combine oats and flour in a large bowl; add almond milk, stir and refrigerate overnight.
  • Step 2
    In the morning, mash the bananas and dissolve the baking soda in the hot water.
  • Step 3
    Add salt, baking soda mixture, baking powder, bananas and honey to the flour mixture and stir in.
  • Step 4
    On a medium high oiled skillet, drop griddle cake mixture by spoonfuls onto griddle. Cook until edges look dry and flip.
  • Step 5
    Serve with warm maple syrup
