green chile crustless quiche

I've had this recipe since the early 80's and it never fails. Great for brunches and is even good at room temperature.

Ingredients

  • 2 cans (4.5 oz each) diced green chiles
  • 1 pound monterey jack cheese, shredded
  • 1/4 pound cheddar cheese, shredded
  • 5 eggs, beaten
  • 1/2 cup milk
  • 1/2 teaspoon dry mustard
  • 1/4 cup flour
  • 1 teaspoon baking powder

How To Make green chile crustless quiche

  • Step 1
    Preheat oven to 400F. Grease a 9x13 baking pan.
  • Step 2
    Combine chiles and cheeses in a small bowl, then pour into the prepared baking dish. In a separate bowl, mix the eggs, milk, dry mustard, flour and baking powder. Pour over the cheese mixture.
  • Step 3
    Bake for 15 minutes, then turn the oven temperature down to 300F. Continue baking for 20 more minutes and remove from the oven.
