My husband's grandmother loved to cook for large family and I was fortunate to receive copies of the best loved recipes. This was one of the breakfast staples in her house.

1 1/2 c
sifted flour
3 1/2 tsp
baking powder
3/4 tsp
1 Tbsp
egg well beaten, room temperature
1 1/2 c
milk, room temperature
3 Tbsp
melted shortening or unsalted butter
1 c
finely diced bananas
1/2 tsp

How to Make Grandma's Banana Pancakes


  • 1If using electric griddle heat to 380 degrees and preheat. If using pan turn to medium heal and preheat the pan.
  • 2Mix and sift the flour, baking powder, salt and sugar.
  • 3Combine the egg, milk, vanilla and shortening/butter in separate bowl.
  • 4Add wet mixture to dry ingredients then mix until just fully combined.
  • 5Gently fold in banana.
  • 6Pour small amounts of batter on greased cooking surface and cook until lightly golden. Serve and enjoy
