My husband's grandmother loved to cook for large family and I was fortunate to receive copies of the best loved recipes. This was one of the breakfast staples in her house.

Ingredients
- 1 1/2 cups sifted flour
- 3 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 1 tablespoon sugar
- 1 - egg well beaten, room temperature
- 1 1/2 cups milk, room temperature
- 3 tablespoons melted shortening or unsalted butter
- 1 cup finely diced bananas
- 1/2 teaspoon vanilla
How To Make grandma's banana pancakes

Step 1If using electric griddle heat to 380 degrees and preheat. If using pan turn to medium heal and preheat the pan.

Step 2Mix and sift the flour, baking powder, salt and sugar.

Step 3Combine the egg, milk, vanilla and shortening/butter in separate bowl.

Step 4Add wet mixture to dry ingredients then mix until just fully combined.

Step 5Gently fold in banana.

Step 6Pour small amounts of batter on greased cooking surface and cook until lightly golden. Serve and enjoy
