  • 1 c
    whole wheat flour
  • 3 c
    all purpose flour
  • 1 c
    finely ground almonds
  • 4 c
    milk, nonfat, dry
  • 1/2 c
  • 1 Tbsp
  • 3/4 c
    baking powder

How to Make Gift In A Jar Almond Pancake Mix


  1. In a large bowl, stir all ingredients together until well blended. Store in a airtight container or a resealable plastic bag.
  2. Yields about 10 cups pancake mix, enough for 5 batches of pancakes.

    Give with the following recipe for pancakes.
  3. Almond Pancakes:

    2 1/2 cups pancake mix
    1 1/4 cups water
    1 egg
    2 tablespoons vegetable oil

    In a medium bowl, combine all ingredients, and stir just until moistened.

    Heat a greased griddle over medium heat. For each pancake, pour about 1/4 cup batter onto griddle and cook until top of pancake is full of bubbles and underside is golden brown. Turn with a spatula and cook until remaining side is golden brown. Re-grease griddle as necessary. Serve with butter and syrup.

    Yields about 1 dozen 5-inch pancakes
  4. I make labels for the jars or packages, or I make a recipe card with a hole punched in it to hang on the ribbon that I attach to the jar.

    I also use a plate or other round item to trace circles 3 - 4 inches bigger around than the jar lid. I use a rubber band to attach the cloth circle to cover the lid/ring on the jar. Then I tie a pretty ribbon on to cover the rubber band and to attach the recipe card. Then tie a pretty bow.
  5. *** If you want to, go ahead and add chocolate or butterscotch chips.
