1/2 c
golden raisins, plumped and drained
1 Tbsp
9 oz
quick cooking oats
5 oz
coarsely chopped almonds
1/2 c
light brown sugar - firmly packed
1/2 c
egg substitute, thawed
1/3 c
1/2 tsp
1/8 tsp
almond extract

How to Make Fruit & Nut Breakfast Bars


  • 1Preheat oven to 350.
  • 2Spray 13x9 nonstick baking pan with vegetable cooking spray.
  • 3Line pan with a sheet of wax paper over bottom and up sides of pan.
  • 4In medium bowl combine raisins with flour, tossing to coat and set aside.
  • 5Add oats, almonds and sugar and stir to combine.
  • 6Set aside.
  • 7Combine remaining ingredients.
  • 8Add to dry ingredients and stir until moistened.
  • 9Press mixture into prepared pan.
  • 10Bake until golden brown, about 25 minutes.
  • 11Cool for 30 minutes.
  • 12Invert pan onto clean work surface discarding wax paper.
  • 13Cut in half lengthwise, then cut each half into 12 equal bars, making 24.
  • 14Wrap each in plastic wrap and freeze for future use.
