Ingredients

  • 1/2 cup golden raisins, plumped and drained
  • 1 tablespoon flour
  • 9 ounces quick cooking oats
  • 5 ounces coarsely chopped almonds
  • 1/2 cup light brown sugar - firmly packed
  • 1/2 cup egg substitute, thawed
  • 1/3 cup butter
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon almond extract

How To Make fruit & nut breakfast bars

  • Step 1
    Preheat oven to 350.
  • Step 2
    Spray 13x9 nonstick baking pan with vegetable cooking spray.
  • Step 3
    Line pan with a sheet of wax paper over bottom and up sides of pan.
  • Step 4
    In medium bowl combine raisins with flour, tossing to coat and set aside.
  • Step 5
    Add oats, almonds and sugar and stir to combine.
  • Step 6
    Set aside.
  • Step 7
    Combine remaining ingredients.
  • Step 8
    Add to dry ingredients and stir until moistened.
  • Step 9
    Press mixture into prepared pan.
  • Step 10
    Bake until golden brown, about 25 minutes.
  • Step 11
    Cool for 30 minutes.
  • Step 12
    Invert pan onto clean work surface discarding wax paper.
  • Step 13
    Cut in half lengthwise, then cut each half into 12 equal bars, making 24.
  • Step 14
    Wrap each in plastic wrap and freeze for future use.
