Ingredients
- 2/3 cup all purpose flour**
- 3/4 cup plus 1 1/2 tbls. whole wheat flour**
- 1/2 cup oat bran
- 1/2 tablespoon chia seeds
- 2 tablespoons flax seeds, ground
- 1 1/4 teaspoons cinnamon
- 1/2 teaspoon baking soda
- 1 cup brown sugar
- 3 tablespoons coconut oil, melted (can use butter)
- 1 teaspoon vanilla
- 6 tablespoons egg substitute (or 2 whole eggs)
- 1/2 cup ground walnuts
- 1/3 cup raisins (soaked to soften)
- 1/3 cup chopped dates
- 2 tablespoons dried cranberries*
- - * can use 3/4 cup any dried fruits for those in this recipe
- ** can use any combination of flours, e.g., spelt, oat, ap, etc.
How To Make fruit and fiber breakfast cookies

Step 1Preheat oven to 350°. Stir together the first 7 ingredients and set aside.

Step 2In a mixing bowl, combine, the sugar, coconut oil, vanilla, and egg substitute. Mix until combined. Stir in the dried fruits.

Step 3Stir in the flour mixture until moist and completely combined (will be sticky). Stir in ground walnuts.

Step 4Drop by teaspoon on sprayed cookie sheets and slightly flatten.

Step 5Bake 10 - 12 minutes or until bottoms just start to brown.

Step 6Store in airtight container.
