Ingredients

  • 2/3 cup all purpose flour**
  • 3/4 cup plus 1 1/2 tbls. whole wheat flour**
  • 1/2 cup oat bran
  • 1/2 tablespoon chia seeds
  • 2 tablespoons flax seeds, ground
  • 1 1/4 teaspoons cinnamon
  • 1/2 teaspoon baking soda
  • 1 cup brown sugar
  • 3 tablespoons coconut oil, melted (can use butter)
  • 1 teaspoon vanilla
  • 6 tablespoons egg substitute (or 2 whole eggs)
  • 1/2 cup ground walnuts
  • 1/3 cup raisins (soaked to soften)
  • 1/3 cup chopped dates
  • 2 tablespoons dried cranberries*
  • - * can use 3/4 cup any dried fruits for those in this recipe
  • ** can use any combination of flours, e.g., spelt, oat, ap, etc.

How To Make fruit and fiber breakfast cookies

  • Step 1
    Preheat oven to 350°. Stir together the first 7 ingredients and set aside.
  • Step 2
    In a mixing bowl, combine, the sugar, coconut oil, vanilla, and egg substitute. Mix until combined. Stir in the dried fruits.
  • Step 3
    Stir in the flour mixture until moist and completely combined (will be sticky). Stir in ground walnuts.
  • Step 4
    Drop by teaspoon on sprayed cookie sheets and slightly flatten.
  • Step 5
    Bake 10 - 12 minutes or until bottoms just start to brown.
  • Step 6
    Store in airtight container.
