This French toast souffle is a wonderful combination of hearty breakfast casserole and deliciously sweet French toast. Perfect for a special breakfast or brunch. It's a twist on a classic French toast casserole. Shredded coconut with raisins from the raisin bread gives it a sweet, tropical flavor. The caramelized pecan topping is buttery, nutty, and crunchy. Yum!

Ingredients

  • 1 - loaf of cinnamon raisin bread (6 cups of stale cut up bread)
  • 4 large eggs
  • 1 1/2 cups milk
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 4 tablespoons butter, melted, divided
  • 1 cup shredded coconut, optional
  • 1 cup chopped pecans
  • 1/2 cup dark brown sugar

How To Make french toast souffle

  • Chopped bread in a baking dish.
    Step 1
    Preheat the oven to 350 degrees F. Chop the bread into big chunks and place in the casserole dish.
  • Eggs, milk, brown sugar, melted butter, and vanilla extract in a bowl.
    Step 2
    Whip up eggs, milk, 1 c brown sugar, vanilla extract, and 2 Tbsp of melted butter.
  • Pour eggs over the bread.
    Step 3
    Pour over the bread and smush down to soak it all up.
  • Bake for 30 minutes.
    Step 4
    Bake at 350 degrees for 30 minutes.
  • Sprinkle with shredded coconut.
    Step 5
    Remove from the oven and sprinkle with shredded coconut.
  • Combine dark brown sugar, chopped pecans, and melted butter.
    Step 6
    Mix the dark brown sugar and chopped pecans with the remaining 2 Tbsp butter.
  • Spread over the casserole.
    Step 7
    Spread over French toast souffle.
  • Bake for an additional 10 minutes.
    Step 8
    Put back in the oven for 10 minutes more. Serve warm.
