Oh yeah, portable French toast! We love this recipe, and perhaps more importantly, your kids will too. Each bite is a delight.

Ingredients
- MUFFINS
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon nutmeg
- 1/3 cup applesauce or canola oil
- 1 large egg
- 1/2 cup soy milk
- TOPPING
- 1 tablespoon sugar
- 1 tablespoon ground cinnamon
- 2 tablespoons butter, melted or maple syrup
How To Make french toast muffins

Step 1Preheat the oven to 350 degrees F. Spray a muffin pan with baking spray or fill with paper liners.

Step 2In a large bowl, sift together all dry ingredients.

Step 3Add wet ingredients and stir just until combined, but still a bit lumpy. Do NOT overmix; overmixing will ruin the texture of the finished muffins.

Step 4Spoon or scoop batter into prepared muffin tin. Fill each cup about 3/4 of the way.

Step 5Bake for 20-25 minutes or until they just start to turn a bit golden at the edges and a toothpick inserted in the center comes out clean.

Step 6For the topping, mix the sugar and cinnamon in a small bowl. Place canola oil in another small bowl.

Step 7Dip the warm muffins in the melted butter or maple syrup or use a spoon to drizzle it over the muffins. Then dip, roll, or sprinkle the muffin in the cinnamon sugar. NOTE: May have leftover topping. The extra topping can be used for dipping while eating the muffins.
