french breakfast puffs
Went to another auction yesterday and as always buy recipe books. This is from The Pioneer Woman Cookbook. I have never bought one hers before but this is called Recipes from an accidental country girl. Really liked some of the recipes. It's cool and raining today and this just called to me. Enjoy!

Ingredients
- 3 cups all purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1 cup sugar
- 2/3 cup shortening
- 2 - eggs
- 1 cup milk
- COATING
- 2 sticks butter
- 1 1/2 cups sugar
- 3 teaspoons ground cinnaman
How To Make french breakfast puffs

Step 1Preheat oven to 350 degrees. Lightly grease 12 muffin cups.

Step 2Mix flour, baking powder, and salt, and nutmeg. Set aside.

Step 3In separate large bowl, cream together sugar and shortening. Add eggs and mix.

Step 4Alternate adding 1/3 of flour mixture and 1/3 of milk to the creamed mixture, beating well after each addition.

Step 5Fill the muffin cups 2/3 full

Step 6Bake for 20 to 25 minutes or until golden. Remove muffins from pan and set aside.

Step 7To make coating, melt the butter in a bowl and in separate bowl combine sugar and cinnamon.

Step 8Dip warm muffins in the butter, coating thoroughly.

Step 9Then roll in the cinnamon-sugar mixture. Coat them well.

Step 10After cooling completely, they can be placed in plastic bags and frozen then reheated later.
