I don't like my oatmeal soupy so you might want to increase the milk some. Recently I've been using almond or cashew milk in place of cows milk. That said this is my favorite way to have oatmeal. The 5 mins prep time includes the total time and is generous at that.

Ingredients For diabetic peanut butter banana oatmeal

  • 1/2 md
    ripe banana
  • 1 tsp
    vanilla extract
  • 1/4 c
    skim milk
  • 1/4 c
    quick-cooking oats
  • 1/2 Tbsp
    creamy or chunky natural peanut butter

How To Make diabetic peanut butter banana oatmeal

  • 1
    Cut banana into chunks and put into a small blender jar with milk; blend until smooth. Put the dry oatmeal in a microwave safe bowl that is big enough to allow for expansion.

    Pour the banana mixture on top of oatmeal & stir to incorporate. Microwave (uncovered) on high setting for 30 seconds.
  • 3
    Stir & microwave another 30 seconds or until it's to your liking. Stir in peanut butter.
