crumb cake from kathy via penny
One of my best friends, Kathy, gave me this recipe she got from her friend Penny, It is a very close rendition of a famous crumb cake from the B&W Bakery in Hackensack, NJ. Although their version is most likely a yeasted cake batter, this recipe is very easy and just as good (to me).

Ingredients
- CRUMB
- 3 cups all purpose flour
- 1 cup sugar
- 1/4 teaspoon salt
- 1 1/2 teaspoons baking powder
- 2 1/2 teaspoons cinnamon
- 3/4 cup brown sugar, firmly packed
- 3 sticks unsalted butter, room temperature
- CAKE
- 1/2 stick unsalted butter
- 1 cup sugar
- 1 egg
- 1 tablespoon vanilla
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 12 ounces evaporated milk
- 1/2 cup powdered sugar, sifted. optional .. use this to dust the top of crumbs after cooking.
How To Make crumb cake from kathy via penny

Step 1CRUMB: Except brown sugar and butter. sift everything together in a large bowl. Then using a pastry blender or fingers add the brown sugar and butter and lightly squeeze into a crumb like texture.

Step 2Preheat oven to 350 degrees.

Step 3CAKE: Mix flour, baking powder, and salt. Set aside.

Step 4Cream the butter in a mixer, then add sugar, egg, and vanilla, creaming all together. Alternate adding flour mixture and milk to the creamed mixture.

Step 5Pour cake batter into a greased 12 by 9 pan. Sprinkle crumb mixture over the top. Bake for about 45 minutes.

Step 6Cool cake and before serving dust the top with a heavy coat of powdered sugar.
