This recipe was personally prepared by Lorraine Passero for the Brunch themed meeting with the Curious Cusiner' October 2015 meeting. This is Lorraine's version of a Just A Pinch recipe. She says to use either a crepe pan or small fry pan to make crepes. "I have a 40 year old electric crepe pan and each time I want to use it, I check it out to see if it still works."

Ingredients For crepes florentine

12crepes
-
10 ozfrozen chopped spinach

4 Tbspbutter
-
3 Tbspflour
-
1 cmilk
-
1/2 tspsalt
-
1/8 tspnutmeg
-
1/8 tsppepper
-
1 cshredded swiss cheese
-
1 tspgrated onion
-
melted butter
-
grated parmesan cheese
How To Make crepes florentine

1Preheat the oven to 375 degrees. Cook spinach and drain well. Set aside.

2Melt butter in saucepan. Remove from heat, stir in flour. Add milk, return to heat and stir until thickened.

3Add salt, nutmeg, pepper, cheese, onion and spinach. Heat until the cheese is melted.

4Place one heaping tablespoon of mixture onto each crepe on browned side and roll up. Place crepes in a 9x9 buttered pan, sprinkle with melted butter and grated cheese. Bake until hot, about 45 minutes.
