cranberry muffins with an orange twist

Ingredients
- 2 cups bisquick
- 2 tablespoons sugar
- 1 egg, beaten
- 1/2 cup orange juice
- 2 tablespoons vegetable oil
- 1/2 cup orange marmalade
- 1/2 cup craisins (chopped fine in food processor)
- 1 teaspoon grated orange zest
- TOPPING
- 2 tablespoons brown sugar
- 1 tablespoon flour
- 1/4 teaspoon nutmeg
- 1 tablespoon melted butter
- 1/4 cup finely chopped pecans
How To Make cranberry muffins with an orange twist

Step 1Mix together bisquick and sugar. Make a well in the center and add the egg, orange juice, oil and orange zest.

Step 2Stir mixture until moistened and then fold in marmalade and craisins. Spoon mixture into muffin tins.

Step 3In a small bowl, mix together the brown sugar through pecans. Sprinkle 1 heaping tsp. over each muffin.

Step 4Bake at 400 degrees - 15 to 18 minutes. My oven cooks hot, so I decrease that temp to avoid the muffins from becoming too brown.
