When we moved to Mississippi these pancakes were on every restaurant menu. We liked them so much I came up with this recipe. Hope you try and enjoy.

Ingredients
- 1 1/2 cups yellow cornmeal
- 1/2 cup all purpose flour
- 1 tablespoon sugar
- 2 tablespoons cooking oil
- 1 large egg
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 cups buttermilk
How To Make cornmeal pancakes

Step 1In a medium bowl sift together dry ingredients, add buttermilk, oil and egg. Blend well. Let stand 10 minutes. Fry in lightly oiled hot skillet, using 1/4 to 1/3 cup batter per pancake, depending on the size you prefer. Fry until golden brown, turning once to brown other side. Serve with butter and syrup or honey.
