Cornmeal mush is well-liked as a down-home Amish comfort food. It can be served fried, or even -for those who can't wait - in a bowl as hot cereal with sugar and milk. This version is from Lizzie's Amish Cookbook.

How to Make Cornmeal Mush


  1. Stir cornmeal and salt into water in a saucepan over medium heat until mixture comes to a boil.
  2. Lower heat and simmer for 20 minutes.
  3. Pour into loaf pan and chill at least 4 hrs or overnight.
  4. Unmold and cut into 1/4 inch slices.
  5. Heat oil in skillet and fry slices until they are golden brown and have crispy edges. Flip to finish both sides.
  6. Cook time includes cooling time.

    Can be served sweet with syrup or savory with ketchup!
