Literally, Com Tam means broken rice. Formerly a popular dish for poor rice farmers in the Mekong Delta of Vietnam. It can be made with non-broken white rice. In fact, if you look on Amazon, broken rice is more expensive than the non-broken stuff! Served with eggs, pickles, and the accompaniments listed, it makes a tasty breakfast. Ingredients
- 1/2 cup broken rice, or white rice
- 2 eggs
- 1/2 cup carrot and Daikon pickles
- green onion, sliced
- fish sauce, to taste
- Sriracha sauce, to taste
- 1 tablespoon chopped peanuts

Step 1Cook rice according to package directions.

Step 2Fry eggs to desired doneness.

Step 3Put a scoop of rice on each of 2 plates. Put an egg on each scoop of rice

Step 4Add some pickles. Sprinkle with chopped green onions and chopped peanuts. Season to taste with fish sauce and sriracha.
