Literally, Com Tam means broken rice. Formerly a popular dish for poor rice farmers in the Mekong Delta of Vietnam. It can be made with non-broken white rice. In fact, if you look on Amazon, broken rice is more expensive than the non-broken stuff! Served with eggs, pickles, and the accompaniments listed, it makes a tasty breakfast. Recipe for the pickles is listed separately.

1/2 cbroken rice, or white rice

2eggs

1/2 ccarrot and Daikon pickles

green onion, sliced

fish sauce, to taste

Sriracha sauce, to taste

1 Tbspchopped peanuts
How To Make com tam - vietnamese breakfast

1Cook rice according to package directions.

2Fry eggs to desired doneness.

3Put a scoop of rice on each of 2 plates. Put an egg on each scoop of rice

4Add some pickles. Sprinkle with chopped green onions and chopped peanuts. Season to taste with fish sauce and sriracha.
