My favorite concoction for fortifying myself against the icy mornings of a Maine winter. Especially if it's going to be followed by a couple hours of shoveling snow.

Ingredients

  • 1 cup water
  • 1/4 cup bob's red mill creamy rice cereal
  • 1/4 cup shredded coconut, unsweetened
  • 1 dash vanilla extract
  • 1 dash coconut extract
  • 1 tablespoon coconut oil
  • to taste - sugar
  • 1 tablespoon heavy cream

How To Make coconut hot breakfast cereal

  • Step 1
    Bring water to boil.
  • Step 2
    Add shredded coconut and rice cereal. Reduce heat and cook 5-8 minutes until desired consistency.
  • Step 3
    Add coconut oil, coconut extract and vanilla extract. Stir until oil is well blended into cereal.
  • Step 4
    Add sugar to taste. I use about 2 teaspoons.
  • Step 5
    Pour cereal into bowl and top with heavy cream. Enjoy as is, or top with silvered almonds, dried cranberries, pineapple, cinnamon or anything else that sounds exciting to you.
