Ingredients

  • 1 c
    cornmeal
  • 1/2 c
    flour
  • 1 Tbsp
    baking powder
  • 3/4 tsp
    salt
  • 1 Tbsp
    cinnamon
  • 1/2 c
    sugar
  • 1/2 c
    butter, melted
  • 2 tsp
    vanilla extract
  • 1 c
    milk
  • 1
    lg egg
  • 1 c
    raisins

How to Make Cinnamon Raisin Cornmeal Pancakes

Step-by-Step

  1. In large bowl, mix cornmeal, flour, baking powder, salt, cinnamon, and sugar. Add melted butter, vanilla, milk, and egg. Whisk until well blended. Stir in raisins.
  2. Cook in skillet on med-high heat until brown and crispy.
  3. Serve with maple syrup.
